Red dry wine, «Crianza» aged-oaked red wine. Wine with a deep cherry red color, some ruby hints at the rim. It is bright and clear.
Aroma: High intensity and great aromatic complexity. Touches of ripe black fruit and black licorice are perceived. When we swirl the glass, we found resinous notes and scrubland notes, such as thyme and rosemary and eucalyptus. Great expressiveness and complexity. After sip, touches of toasted coffee and mocha are appreciated, notes of pure cocoa.
Taste: On the palate the wine is soft but notable entry, medium-high body. Rounded and silky tannins give it a very good structure. Well balanced, very good acidity.
Pairing: Perfect to accompany risotto type rice, grilled mushrooms, cured cheeses, roasted fish or in sauce. Pork tenderloin and all kinds of red meats.
Maturing: Spontaneous alcoholic fermentation in stainless steel tank with temperature controlled by shower; previous decision by tasting, racking off the wine so the fermentation ends without contact with the skins. Malolactic fermentation in French wood tanks of 5000 L. 14 months on 6 years old french oak barrels.
