Сleebourg respects land and soil and pays attention to cultivation sustainability. This is one of the most important priorities for the company. Limiting the impact on the environment to preserve this valuable asset is the Cleebourg philosophy. This is taken into account in the various stages of winemaking, equipment selection and the entire production process.

Grapes
Cleebourg wines offer a selection of proven varieties and with particular quality characteristics. Seven Alsatian grape varieties (Sylvaner, Pinot Blanc, Muscat, Riesling, Pinot Gris, Gewürztraminer, Pinot Noir) are refined, vinified and then blended. This fine work already begins in the vineyard with a 60% hand-picked harvest.

Maturation of wine
The white wines are fermented in temperature-controlled barrels and aged in old barrels in the historic wine cellar of the Hospice de Strasbourg.
For the red wines, the grapes are selected at harvest, stored in punching vats for 6 to 8 days and gently pressed. Fermentation continues in thermoregulated barrels with malolactic fermentation, aging in Burgundy barrels for 12 months.

Bouquet and aroma
The Cleebourg range includes a wide selection of wines: from Riesling Lieu-Dit Kammerberg with great aromatic complexity on the nose, where notes of citrus mingle with mineral and toasted nuances, to Pinot Noir aged in barrel, which expresses a beautiful alchemy between a delicious black cherry fruitiness and woody notes.
The wines will be the ally of choice of many different dishes, both with white meat and fish, and accompany seafood and cheese magnificently.
