Maturation of wine
Traditional maceration, the 12 months in new oak barrels.
Bouquet and aroma
Winery has a wide range of products, including Coffret Esprit de Renaud de Valon, dominated by notes of blackberry and blackcurrant jam, the powerful, concentrated bouquet then blossoms into notes of spice, pepper and vanilla in perfect harmony. It pairs perfectly with saddle of marcassin marinated with garrigue herbs, accompanied by delicately caramelized Pardailhan turnips.
