Vinification: Traditional maceration for the Grenache (6 days) and 70% of the Syrah for 20 days. Carbonic maceration for 15 days for the Carignan and 30% of the Syrah.
Maturation: In oak barrels for 12 months.
Tasting notes: A dense, mineral and fruity nose with a slightly vanilla touch. A very fresh attack precedes a beautifully structured palate with notes of toast, cocoa and fruits (blueberries, blackcurrants) on ripe and fine tannins. The very long finish indicates excellent ageing potential.
Food pairing: Grilled dishes, red meats, game, leg of lamb and cheeses.
