Vinification: Traditional maceration for the Grenache (6 days) and for 70% of the Syrah (20 days). Carbonic maceration for 15 days for the Carignan and 30% of the Syrah.
Aging: Aged in oak barrels for 12 months.
Tasting Notes: A dense, mineral and fruity nose with a slightly vanilla touch. A very fresh attack precedes a beautiful structure with notes of toasted aromas, cocoa and fruits (blueberries, blackcurrant), supported by refined and well-developed tannins. The very long finish indicates excellent ageing potential.
Food pairing: Grilled dishes, red meats, game, leg of lamb and cheeses.
