Vinification: The crushed and destemmed grapes ferment in a steel tank at a controlled temperature with daily pump-overs. Postfermentation maceration on the skins for about 3 weeks. The wine ages for 1 year in barrels.
Tasting Notes: Carignan is an expression of dark cherry fruit, blueberries, violet and other floral aromas along with notes of orange peel, black liquorice and cocoa. Well bodied with fine tannin with excellent potential for ageing.
Food pairing: It is delicious paired with roast meats, duck and earthy root vegetables.
