Manual harvesting of Portuguese grape varieties in a Sustainable Production system: Arinto, Antão Vaz and Alvarinho. Fermentation in French oak barrels and cement deposits, and 6 months aging in sur lies barrel. Aroma of lime, excellent acidity and balance that reflects the microclimate of Alto Alentejo and the great wines of this region.

Aroma: Fruity aroma with notes of yellow plum and pineapple
Taste: In the mouth, it has an excellent volume, dense but with good refreshing acidity.
Pairing: Pairs with roasted chicken, sea bass au beurre noisette or risotto al funghi.
Maturing: The must was decanted at cold temperature (10°C) and fermented in French oak barrels. After alcoholic fermentation, the wine ages for 6 months in barrels with battonage and sur lie.

Red wine TORRE DE PALMA TINTO MUSAS 2020

The Choir of the Muses is part of a vast set of mosaics from the Roman villa of Torre de Palma, which paved the triclinium, the main room of the house. As a caption it has inscribed SCOPA ASPRA TESSELLAM LEDERE NOLI. VTERI FELIX, "Don't ruin the mosaic with a broom that's too rough, good luck", an appeal from master mosaicists and the owner of the house to take care of such a beautiful and sensitive work. More than a thousand years later, on this same ground, we honor all those who manufactured this wine, for the care and affection shown, as the ancients did. It was harvested and selected by hand, trodden by foot in Estremoz marble vats and vinified in traditional ceramic pots, where it aged for 1 year. It is with the same care and affection that we make it reach you. Enjoy. Limited edition of 1000 bottles.

Aroma: Exuberant aroma of fresh berries, black cherry, wet clay and some balsamic notes.
Taste: It is dense in the mouth, with soft attack and intense finish, with the presence of tannins characteristic of Aragonez.
Pairing: It pairs perfectly with Wagyu beef tenderloin with sautéed vegetables, codfish or grilled meats.
Maturing: After destemming, the grapes are taken to marble wine-presses where alcoholic fermentation takes place and traditional foot treading is done, followed by ageing in large wooden barrels for 10 months.

Rose wine TORRE DE PALMA ROSÉ 2022

Wine from two red varieties in a Sustainable Production system: Touriga Nacional and Tinta Miúda (Graciano). Hand harvested and gently pressed to obtain a light pink colour. Aged for 6 months in cement deposits (70%) and in used barrels (30%). Fruity aroma with hints of raspberry and currant. A very elegant, fine wine with vibrant acidity. Production limited to 5200 bottles and edition of 68 Magnum bottles.

Aroma: Complex and elegant aroma with notes of green apple, lime and wet stone.
Taste: Rich fruit flavor, dry and mineral. .
Pairing: Harmonizes with tomato rice with fried horse mackerel, Alentejo gazpacho or sushi. .
Maturing: The grape must was decanted at cold temperature (10°C) and then fermented and aged in used french oak barrels from Burgundy with battonage and sur lie.

Red wine TORRE DE PALMA BLEND TINTO 2020

Manual harvesting and treading on foot in small mills of pink marble from Estremoz. Portuguese grape wine in a Sustainable Production system: Alicante Bouschet, Aragonez, Touriga Nacional and Tinta Miúda (Graciano). Aging for 12 months in French oak barrels. Very charming wine, with notes of small black fruits and pepper.

Aroma: Very aromatic wine, with notes of black plums, mint and cocoa
Taste: In the mouth is elegant, with nice structure and alive tannins. Long and persistent final tasting.
Pairing: Pairs with Wagyu beef tenderloin with sautéed vegetables, lagareiro cod or 4 cheese pizza.
Maturing: After destemming, the grapes are taken to marble 'lagares' (stone tanks) where the traditional foot treading is done with alcoholic fermentation at low temperatures. Half of the wine was aged for 12 months in French oak barrels and the other half aged in cement tanks

Author wine with two of the most iconic Portuguese grape varieties in the sustainable production system: Arinto and Alvarinho. Manual harvest and fermentation in used Burgundy barrels where it waits for 6 months. Citric, dry and mineral aroma. Excellent content and salinity given by the proximity to the Serra de São Mamede. Production of 4826 numbered bottles.

Pairing: Harmonizes with grilled prawns, natural oysters and shrimp curry.
